The axis of coffee evaluation is shifting from where it was grown to how it was made. We measure and record pH, Brix, moisture, water activity and drying days on every lot. Partner farms measure by the same procedure, aligning quality standards across borders. This is not a system that denies the senses — it makes them reproducible.
