We met Mr Shirai at Tokyo Coffee Festival in the winter of 2025, and two months later he was at our farm in northern Laos. Days Coffee Roaster is the kind of roaster that really does come all the way to the farm to make its own original lot. The beans we set up together, from picking through processing, arrived in Japan this summer.
Same generation, and they move fast. This time we bring the season's lots to their shop in Niigata.
And of course the lot we made together. What we were thinking on the farm when we chose this processing: we hope to tell it from both the maker's side and the roaster's.
For the steps we worked through together see The four stages of fermentation and Managing fermentation by numbers. For numbers per lot, What is the Data Bank. Also on the same tour: 1 Sep Nagoya and 2 Sep Matsumoto.
